Whisky contains about 40% of ethanol by volume, about 60% of water. 0.4*0.789 + 0.6*1 = 0.915g/ml, so a 100ml glass of whisky is 91.5g
Now specific heat: heat. 0.4*2.46+4.184*0.6 = 3.5 J/g*K

We want a room temperature whisky (24C) down to optimal 15C. That's 10C, or 10K drop. 10*91.5*3.5 = 3202 Joules to extract as heat.

Melting 1 gram of -5 degrees ice into 15C water gives 334+2.46*20 = 383.2 Joules. That's 8.3ml of ice, Typical ice cube is about 10g, so melting one 10g ice cube will bring the whisky down to the right temperature and compensate for the glass and heating from surroundings.

Now, let's take -5C granite. 3202 / (0.790 * 20) , that's 202 grams. At around 2g/ml density, you need to mix whiskey and granite 50-50 to get to the right temperature.

Okay, calculation for solid steel cubes:

Sure, steel is much denser, so a 10ml steel cube will be 75 gram. Meaning 5 solid steel cubes can achieve the work of a single ice cube, and your proportions are 1:2 instead of 1:1 (with granite) and 1:10 (with ice). And your drink weighs now over a pound.

tl;dr steel has totally crap specific heat, nearly half that of granite and 10 times worse than water. The high density mostly makes up for it volume-wise, but there's no heat of phase transition, solid steel cubes remain solid throughout, so you lose all that heat of ice turning to water.
