Try something new: divide a 1 lb tray of beef into quarters and lightly smoosh each patty to about half inch thick, trying to keep it as unpacked as possible so you can still see the individual strands of meat. Sear the hell out of both sides and never smash. It makes an extremely tender juicy burger and is really nice for a change every once in a while.
