A combination of oxidation and other chemical reactions specific to the type of vegetable. Especially with alliums like onions and garlic, much of the distinctive flavor comes from chemicals that are released when the vegetable is damaged. These are volatile and lose their punch quickly. Take two garlic cloves and smash them. Eat one immediately and put the other in the fridge for a day or two. It'll taste like nothing.
Carrots are about the only vegetable I can think of that's resilient to this, but their texture is terrible if not kept at the proper humidity after chopping.

Pre-diced vegetables are considered a ready-to-eat product and because of that they are held to a higher standard than whole vegetables. In order to be considered safe to eat, they are typically soaked in any number of food safe sanitizing solutions. This is why it tastes weird. This is why Burger King lettuce tastes like bleach.

Large manufacturers have more sophisticated methods for doing this, but your typical grocery store is doing the bare minimum and yes, you're ingesting residual sanitizing solution.

Chop your own vegetables.

these have really short shelf lives, 5-6 days from when they are received
If you have to buy these, just get the ones in the back of the shelf
light and heat significantly deteriorate them
any kind of moisture or sweating in the package is a bad sign if you intend to consume them raw
If you are going to be cooking with pre-diced veggies, just buy frozen

The nitrogen gas prevents oxidation, but the cells die from asphyxiation. When you open the package, nothing has browned/oxidized and no bacterial or fungal growth has occurred, but the plant material tastes weird because the plant cells have been dead for a while

Would a supermarket even have this kind of gear to pull this off? Those packages always look like they're done on site rather than shipped in. Like, if it was done at the same place that does premade salads, it would probably be in a bag as well rather than those plastic tubs. Besides, I've never seen any of these pre-chopped vegs that didn't have like a 2 day expiration date.
