Pink = curing salts. I'd be glad if they'd use less of it here in Gemany.

Your body produces nitrites in huge quantities for digestion
You will swallow 50 times more nitrites in your saliva than you will ever consume from cured meats
It's fine

It depends whether they use cured meat or not. Some types of pie say use one, some the other.
Both are good when done well. Requires good meat, good pastry, good seasoning and good meat jelly to fill in the gaps. Lots of pie makers get at least one of those wrong.

Cold congealed meat in a stiff flavorless crust does not sound appealing. The pork pie looks good, but I would prefer it if it was fresh out of the oven. What's the reason for eating it cold?

i can't think of a single type of pie, sweet or savoury, that isn't good cold if it happens to be good hot. or vice versa.

maybe that is the true magic of the pie.
