they have not been using refined seed oil for cooking for hundreds of years. probably not even a hundred years.
more recent studies prove that pufa oils don't work like people thought it did. mainly because they made it up entirely, as a solution for the heart disease scare.
unsaturated fats are good and cholesterol is bad to have, but eating it is a different thing and won't necessarily cause it in your body

Processing it with hexane's slightly worrisome, but more of an explosion risk than a direct health risk, especially with the steam distillation stripping most of the hexane back out (n-hexane forms azeotropes with the organic acids they treat it with, but not with oil or water; it actually makes these things easier to distill out). Unfortunately, it strips out tocopherols (vit. E) and beta-carotenes... so... yeah, it's Omega-9-heavy food lube.

Aside from the O-3:6:9 ratio (if that's even your bitch about canola), none of that's an issue if it's cold-pressed (squished and filtered), but that usually means it will go rancid eventually, and would have a lower smoke point.

Hydrogenated oil is an industrially created trans fat. Essentially, it's shortening. Shortening can be and is made from canola oil, but they are not the same thing.
