Just a suggestion, you don't have to cook it. If you "shred" it by slicing SUPER thin, you can use it in sandwiches, tacos, etc. but I'd flavor it with a marinade of some kind. For tacos, I mix it with lime juice and pico de gallo. Depending on your type of sandwich, you could mix it with various dressings.

Cabbage stir fried with garlic, minced ginger, soy sauce, and ground chicken or beef is delicious. German-style red cabbage is also amazing. If you're looking for a challenge and can wait some time, then make sauerkraut or kimchi.

Some guy here posted this a while ago. Take a few pieces of bacon, chop into smallish pieces. Render fat. Toss in sliced cabbage. Add salt and red pepper flakes to taste.

My favorite:

>Toss the cabbage in oil, vinegar, and a bit of salt
>Fry in a pan until cooked through and even slightly crispy
Optionally you can fry it with sausage, bacon, onion, and other things to add flavor. If you want to add garlic, wait until near the end because garlic gets bitter when overcooked. The vinegar prevents it from going mushy. This is my favorite because I make a lot of it, and use the leftovers for eggrolls or stuffed dumplings. I like to flavor it with black pepper, red pepper flakes, onion, ground sausage, and a bit of hoisin sauce at the end.
You can slice it up and throw it into soup. Slice it up and put it under a roast before cooking so it simmers in the meat juices. Its good for pickling or making slaw. Its very versatile.

I made a soup that was essentially 1/2 a cabbage, added to mirepoix (carrot, celery and onion diced), some garlic and mixed herb seasoning, chicken stock, and two large potatoes diced.

At the same time I oven roasted an entire ham joint, to serve the soup I sliced thick cuts of the ham and dropped it into the soup.

Cabbage, potato and ham soup. Serve with buttered bread.

It needs a little while to steam its not like spinach. In the big list of cooking times it goes maybe a little after diced potatoes. It should also take up a shitton of space and make you feel like you put way too much in until it wilts. Remember its mostly water.
