You wash it daily with hot water and a soft-bristled brush, then scrub it with oil, rinse that out, then wipe it dry, heat it up until it smokes and coat it in a high temp neutral oil, turn off the burner, and leave it to come down to room temp with the fan on.

If you're burning stuff on it badly enough that doesn't clean it, you need to buff the entire surface and season it again, which takes like no time with modern power tools and a wire brush.
