I read something on the espresso discord a couple days ago. People who have gaggias love them. People who have HAD gaggias fucking hate them. They're cheap easily moddible shitboxes that aren't very thermally stable out of the box. my roaster has trash selection this time of year but its good enough.
i feel like i have just been circling the same 3-4 beans for a few months now.
i feel like i have cabin fever. i feel like if i have to drink 1 more ethiopia/guatemala/honduras/rwanda natty im going to lose it.
but if its not those its some blends that usually only have washed in them and i just can't do washed anymore because they are so goddamn boring, and im not going to spend $100kg for a boring shallow coffee.
i have tried other roasters but i got burned a few times where they said they were a roaster but they were just a reseller or they were a roaster but they only roasted once a month and in my eyes were essentially selling stale beans for the same price as fresh beans.
just picked up some halva which i havent had in at least a year or two so that should be fun.

Beginner here, I'm using a Flair Classic with pressure gauge + a Commandante. I believe I've dialed the beans in reasonably well, I get very consitent flow of 40-50 seconds. I preheat the chamber twice, sometimes three times. I'm using the beans from my local roaster they use in their cafe so I can use the espresso I drink there as a benchmark.
After about a month of trial and error I'm happy with the shots, but I've noticed that they're substantially more bitter compared to what I drink at the cafe. I realize my 600$ set-up will never compete with their 20k machine, but I'm wondering what else I can try to mitigate the bitterness.

To make a cold brew it seems like you need to use way too much coffee to water. Why couldnt you use less overall? Also it seems most people use cold water the entire time but why not use hot water (say, 180F or so) to kick start the process then leave it in the fridge?

You can make cold brew at whatever ratio you want. Most recipes are a concentrate for diluting back down with milk. Hot bloom cold brew is a thing.

The answer to both your questione is that many of the soluble compounds in coffee will not dissolve into cold water the way they do in hot water. This the reason you need more coffee in your brew ratio, because you're getting less extraction from each gram of coffee than you would in your brewing methods. The reason people don't start with hot water then cool it down is because that is not cold brew, it's iced coffee. The people who prefer cold brew like it specifically because of the flavor difference from hot brewing, which exists specifically because brewing with cold water changes what gets extracted from the coffee.

Personally I don't enjoy cold brew and think it's a waste of good coffee, but your mileage may vary.

Burr edges are sharp when new, and they dull over time like anything else that's sharp. Its not grind size but ginder quality. Unless you have very well aligned burrs and only grind easy to grind beans you will produce fines. The amount of fines varies between beans and grinders but grinding coarser will not fix it. What you should do is not agitate your grounds. I just ordered a 1Zpresso JX Pro S but since now I used pre ground coffee, I just asked the roaster to adjust the grind based on my experiences and so far I’ve seen that the Giannina, having narrower holes in the filter vs other moka pots, likes a more finer grind, closer to espresso size.

If you know they're going to show up a day before hand I'd just get a cold brew pot from Hario and a large capacity milk frother/heater (they usually come with a whisk that froths an a non-whisk mixer that doesn't do much froth but stops things burning).
A short zap in a microwave will heat the cold brew up and then you can just add the milk.
If they aren't picky you could just get a smooth instant or those sticks with the milk & sugar inside and use the milk frother to mix it all up.

im guessing is you have shit consistency so even though you are grinding coarser you are still getting a fair amount of fines which is choking the filter under the top layer of coarser ground coffee
