The pizza was literally 30 seconds. Every pizza is gonna have very loose cheese until it has had a few minutes to set. Instead, gordon immediately tore off a slice and started shaking it to get the cheese off. He even had to resort to scraping it with a fork to demonstrate his "point" that the cheese is falling off. If he waited 2 minutes it would have been fine.
The "uncooked" dough is also a cope. Dough on the upper side of the crust is always going to be soft since it's never exposed to air and traps all the moisture in the dough and the cheese.
The pizza was fine. Gordon was going out of his way to make it look shitty because that's the point of the show. He's supposed to be there to improve the restaurant so obviously he's gonna play up the negatives of the food he's initially served
