That's an okay price. 20 oz of fish should be 2-4 meals especially if you are doing both rolls and nigiri.

Making sushi at home is fun, but there is a learning curve to handling the vinegared rice, slicing the fish, and proportioning everything properly.

The proportions are extremely important when making nigiri. 10-15g of rice and a thin slice of fish. Using a scale at first will be very helpful.

I checked my local fish monger and ahi tuna filet is going for 35/lb and the salmon "toro"/belly is like 26/lb.

Seems reasonable enough...

Learn Chinuki and go fishing

>monger
baka

step 1: go to a nearby river or lake
step 2: catch the fish yourself
step 3: bring them home and make sushi

you're reinventing the wheel. it's literally raw fish and rice you don't need special order folded a thousand times fillets

Buy a good cut of either don't fall for 'sushi grade' fish because that term isn't regulated and is slapped on fish for marketing purposes
