I'm kind of tired of this whole "le eat the bugs" low effort bs of comparing it to shrimp and lobster and crustations that are completely different and prepared differently than how any human cultures that eat bugs in them eat bugs. Eating a bag of gras hoppers is like eating chips with really weird texture and it's nothing like eating crab or lobster or some shit. Lobsters and crabs have actual meat that is succulent and there are numerous presentable ways to prepare either by itself or in dishes. For actual insects you'd find on the ground, there aren't really many ways to prepare those that's palatable.

Chitin is inedible. While prawn, shrimp, lobsters, and crab have chitin, they also contain meat. But this is true of most animals, there's always some part that is inedible. When it comes to bugs though, most of it is inedible. Especially cockroaches.
