The company cares about their profits - as a consumer that is an issue for me because in order to maintain the bottom line with a vast menu, corners will be cut which affect the quality of the food that I am paying to eat. It's far better for a restaurant and the customer for them to make five things well than twenty things terribly.

It's bad business, it's unrefined, makes it harder to choose, prolongs table turnover, easier to fuck up and be inconsistent, inventory is harder to upkeep and if youre recycling ingredients they're going to be similar dishes. Also kind of hurts the restaurants identity. Your restaurant will be known for 5 great dishes out of 10 good ones, but that doesn't mean as much out of 50 subpar dishes.

Depends on the place and types of dishes really. The size and popularity of the restaurant as well. I can trust a big kitchen with a lot of customers coming in, yet if a food shack has too much choice then it's odd.
Low amount of dishes available may be a marketing trick to sell you prepackaged goyslop while making you think it's all homemade though.
On the other hand I'll trust a restaurant that has 20+ main dishes but has a "our specialities" section with like 4-6 dishes and usually order that.
TLDR : There are more factors at play than just variety.
