Polymer chemist here. I highly recommend full synthetic mayo. Here at Hellman's we've developed some rotaxane proprietary anionic polymers as additives to improve on flow/kinematic viscosity and prevent cholesterol deposits on the arteries of fatties. Some *are* perfluorinated but it's usually not an issue for fatties since lifespan, on average, levels off at 57

it doesn't really matter if you're using synthetic or conventional at like, 20 or 30 years old. but by the time you're in your mid 40s or so you really want to transition to synthetic otherwise the mayo sludge starts to become a problem
