Yes. His podcasts are cringey. I can't make it through even a portion of one. On the other hand, his technical videos are well researched, honest, and grounded with pragmatism, and his cooking videos are, like you said, without BS. Moreover, they aim to understand convention, and challenge it. This makes it a good gateway for everyday joes to get past pretentious cooking. Hopefully, people upgrade themselves to youtube videos like https://youtu.be/rzL07v6w8AA that really move the understanding of kitchen work past the trappings of tradition.
