I've eaten it straight out of the package but i like to use it in some homemade snacks.

-pan sear with butter and add a little asian sauce (orange, general tsos, etc)
-homemade mac and cheese with homemade cheese sauce made of your favorite cheese and milk and egg, thowing in finely cut surimi and mini shrimp
-homemade sushi
-tuna salad but you substitute the tuna for surimi

It depends on what you buy of course, but I don't see why intrinsically fish meat mush and binders would be bad for you. Crab sticks are kinda like the asian equivalent of hotdogs, miscellaneous protein paste in a tube.

Even with fillers it's really not that bad for you. Maybe some shitty brands will pump random bullshit in there, but for the most part it's just a formed fish paste held together with gluten based filler. You can easily make it at home, it just won't look as nice.

into a bowl about 5 tbsp of any mayo, black pepper, fresh lemon or lime juice, good soy sauce. mix to taste, i usually go with 2tbsp soy and one of lemon.
four hard boiled eggs, four medium pickles, a pack of surimi - all cubed. drained can of corn, a small raw onion finely diced.
do the dressing and onion first, mix em so the onion can lose some of the raw edge while you do the rest.

tastes good as is, better after 30-60min, a small improvement after 5+ hours. personally i use an egg slicer with solid blades to cut everything other than the onion - makes for nice even slices.
you can add boiled potatoes or rice as filler, but it does nothing for the taste.
