You can puree and freeze bananas if you treat them with sodium ascorbate (ascorbic acid salt). You can make sodium ascorbate by mixing ascorbic acid (vitamin C) and sodium bicarbonate (baking soda). You can even use lemon juice instead of ascorbic acid. Treating the banana puree with sodium ascorbate will not only prevent it from blackening, it will even lighten it's color and remove any blackening that may have already happened.

Use treated banana puree for puddings, custards, ice cream, sauces, pancakes, muffins, banana bread, cookies, smoothies, etc.

If you have a centrifuge you can make make banana juice out of treated banana puree. You probably don't have a centrifuge.
