Rice is a tropical climate crop. Most of the US is too cold to grow it cheaply in comparison to wheat, corn, or potatoes.

Pretty much. Other countries have this misconception that the US is exactly the same as other countries when in reality it's too varied and large to have a homogenized culture across the board (contrary to what twitter and fox news would like you to believe). Southeast you'll see rice used a lot more in non-hispanic/non-asian dishes compared to New York or Wyoming because of the historical availability, and likewise you're not going to see much for fresh seafood in landlocked states.

You just grow crops where the climate is suitable and load them onto the trains to take them everywhere else. It isn't 1810. Things don't have to be within range of a horse and cart anymore.
