How many plates do you usually eat when going for this type of restaurant?

For me it's 40+ on a good day, ~30-ish on a bad one.

Around 310 pounds last time I weighed myself which is like half a year ago. It's probably (i.e. hopefully) less now, I recently started cutting almost all calorie-intensive foods from my diet. Like, this week for example I ate nothing but plain potatoes with a few caramelized onions and baked zucchini and/or steamed broccoli. Sometimes some sauerkraut as well. I also only eat one meal a day and given the amounts I eat (easily upwards of four pounds of food) it's filling as fuck and reasonably edible. I shit way too much now though, it's kinda scary.

The sushi thing is something I do like once a month with an acquaintance so I assume it doesn't outweigh the calorie savings. Even two pounds of nothing but potatoes are only ~900 calories.

Depends on the place. Some do it per plate (with certain ones costing more), others do an all-you-can-eat version, sometimes within a certain time frame. For example, I've been to ones where it's "Have as much as you want from the conveyor belt within the opening hours", others where it's "Have as much as you want from the conveyor belt within an hour" and also once one fancy one where it was "Have as much as you want from a menu within two hours but you can only order a certain number of dishes every fifteen minutes". The last one was the best I've ever been to quality-wise and also had the widest selection and it was kinda neat ordering with a tablet and getting shit brought to your table. But even so I left without being full and it was kinda pricey so overall it was so-so.

Yes, more or less. The ones I'm talking about (in the OP) either have two regular-sized maki rolls or four of those tiny finger-thick ones. Or one single thing if it's like a big piece of sashimi. Every conveyer belt style place I've gone to has different colored plates like this but they correspond to a base price. Let's just say yellow is $2, red is $3, and black is $5. If you bought the buffet then you only pay the initial charge UNLESS you have leftovers. If you have leftovers then the base price of whichever plate it came from is tacked on to your bill. These ladies have enough leftovers to reasonably assume they could be charged for each plate. Seems like a good way to turn what was probably a $20 meal into a $50 one.

By the way, the one I found to have the best bang for my buck was some tiny sushi restaurant run by an Asian couple with maybe 20 seats in total. I went there on a Sunday around noon with a friend and we were the only ones there for like an hour before someone else showed up. It was on the lower end of the price spectrum but had some amazing service. To start with, we each got a serving of miso soup. Then, instead of a conveyor belt thing, they had a buffet-style deal where you'd go and plate your own shit from an assortment of sushi and they would periodically refill it. It featured most items you'd expect plus some not-quite-so-usual stuff like deepfried radish (not daikon though, I think) and chicken skewers (neither yakitori nor karage though). Before we left we got offered some fruit salad, too, for some reason. Overall awesome value. I also tried some plum wine there, tasted surprisingly well. I dunno why I expected it to be like liquid umeboshi.
