You didn't make carbonara. I'm sure it was delicious, but carbonara it wasn't.

I like ham-and-tomato fried rice. Are those low-juice tomatoes available where you are? You use those.
I've heard of Americans making ham salad. From context, I suppose it's like their chicken salad, tuna salad or pasta salad IE it's bits of finely chopped ham mixed with mayonnaise.
You can make ham croquettes. Just mix chopped ham into mashed potato, add egg and flour until you can form it into zeppelin-like shapes then crumb and fry to golden.
Ham and cheese quiche. If that's too similar to an omelette, try making ham-and-crepes cake. For that, you make a bunch of crepes, place one into a springform, spread some mushroom-y cooking cream on it, top that with shredded ham, top that with shredded cheese and top that with another crepe then repeat the process until it's all used up then bake until the cheese is melted. To serve, you slice it as you would a cake. The crepes can be swapped out for thin omelettes.
Ham and bean soup is nice, as is split pea.
Use it as a topping for homemade or even shop-bought pizza.
Eat it with crackers.
