What's your thought on this ingredient? Its spent years being slandered as the generic "ugh, disgusting food!" ingredient meme, slandering it almost out of existence when it used to be a highly often used item, not unlike how lard got slandered.

Do you cook with them, and what do you use them for?

One of my favorite easy dinners is shallots, garlic, and anchovies plus their olive oil melted down and cooked with diced fresh tomatoes until soft, and then add some spaghetti or whatever pasta you have on hand. Mushrooms good too

Still fucking is where I'm from.
We usually flour and fry the bitches but i hate fried oily fish. I like them better steamed or simmered and served cold dressed in vinegar with garlic and sweet parsley as a summer salad.

Never have myself. I would if i could find them fresh. I no longer live in my home country and fresh anchovies are quite uncommon where i am now
I've used tinned ones in various dishes, though, but only as a seasoning, never as the star

I think Anchovies go well with tomatos, but not whole anchovies; that's just too concentrated/pungent.
Anchovies are good in that they disintegrate into sauces when saute'd, using them whole is overkill when you get a bite with a whole one.

One tin of anchovies (two if you REALLY like them) is enough for a pasta sauce for a 16 ounce pasta box worth of pasta, cooked with the onions/garlic/ect.
