>No. It's not necessary or recommended for consumers to wash commercially packaged eggs, and it may actually increase the risk of contamination because the wash water can be "sucked" into the egg through the pores in the shell. When the chicken lays the egg, a protective coating is put on the outside by the hen. Washing eggs reduce the risk of salmonella (present on the egg shell from the hen's poopies) migrating to the insides. It does have the "downside" of needing to refrigerate eggs since it peels away the natural protective coating. It's still a good idea to refrigerate unwashed egg for long time storage.

>The best way to keep eggs is to store them in their original carton in the refrigerator as soon as possible after purchase. by washing eggs close to the source, we remove bacteria from the entire journey the egg goes on. Now the egg can be cartoned and shipped, put on shelves, sold, transported home, set on the counter, in refrigerator, and cooked with no risk of contamination. This is huge. The only drawback to this safety and convenience is that it exposes the porous eggshell which means other sources of bacterial contamination can reach the inside of the egg if the eggshell is wetted. This is a very minimal risk. There's a small upside for the consumer too- they don't have to wash the egg, they shouldn't wash the egg.

When you DON'T wash the egg, you now have to wash to prevent contamination for every surface that eggshell touches. Literally transmission of shit particles and bacteria from carton to hand to food, or from egg to counter to other food, from storeshelf to hand to mouth, the list goes on. There's a small convenience here for the egg producer- they don't have to do shit(they just ship it). Meanwhile, consumers HAVE to wash the egg.

for everyone's information, REGARDLESS of wash/unwashed eggs can stay good for up to 3 weeks without refrigeration, and nothing changes that outside of something penetrating the eggshell. with refrigeration, they'll stay good for months.

American here, I bought these eggs at Kroger, all of them are thoroughly washed per state law. The color has nothing to do with it, and the "protective outer membrane" concept is essentially an old wives' tale. It used to be thought bacteria like salmonella could only get into the egg from the outside, but we've learned better in recent decades.
>1. A chicken infected with salmonella will end up with salmonella INSIDE the egg during the creation process, so any egg laid by an infected chicken will always be unsafe with or without washing.
>2. An egg shell and the INNER membrane are both enough to keep all external bacteria out of the egg, but washing any potential bacteria off the egg means less chance that you'll end up with it on your hands and then on other food items, containers, or cookware after handling an unwashed egg with bacteria on the shell.
This whole "don't wash your eggs" thing is a fucking meme.

In the UK eggs are completely unwashed, right from chicken asshole to your home, cleaning of any type is prohibited.

Why? Because the UK doesn't want to compete with UK egg producers so they begged the government to mandate something that US egg farmers would never accept, like packaging and delivering unwashed eggs. Then like all good protectionist actions they claimed it was to protect the consumers from inferior products that had been washed.

>In the United States, after the eggs are laid by the chickens, they go through a cleaning process. The eggs are washed in warm water and a detergent. After washing, they are rinsed and cleaned with a sanitizer to remove any remaining bacteria. The eggs are then dried to remove moisture from the surface. The result are eggs that are clean on the outside, and look spotless.
>However, washing and sanitizing the outside of the egg removes the egg’s cuticle. The cuticle is a natural layer that protects the egg from harmful bacteria getting inside. If the egg had been fertilized, this is how the egg naturally protects the embryo while it is developing. Cleaning the eggs removes the cuticle, so the eggs must be kept at refrigeration temperature. Otherwise, the bacteria could easily enter the egg and multiply to dangerous levels. By keeping it out of the danger zone, salmonella can’t multiply rapidly.
Okay, cope your way out of this one Americans.

The brown color of the shell can't just be polished off. Industrial scale egg producers pick chickens with genetic predisposition for white eggs and then put all the eggs through an extensive sorting process to group them by size and color so that identical-looking eggs all get packaged together. I assume they also sell off many non-conforming eggs to businesses that make things like bottles of scrambled egg or egg white or egg white protein powders where the shell appearance will obviously not matter.

Because it's possible to get an egg that's internally contaminated with salmonella because of a chicken infected with it that wasn't noticed. If you set that egg out at room temperature, washed or not, the bacteria inside it will flourish. However, if you have healthy eggs with no pathogenic bacteria inside you can set them out at room temperature with no issue even if it's washed. Also, to the "why do Americans have to..." question, I see that a lot regarding a number of things and it goes back to us culturally being much more conservative about food safety like I mentioned. Europeans look at something Americans do, like refrigerating eggs, and assume we HAVE to do that because something is WRONG with the eggs. But no, that's not true, it's just that refrigeration is a way to ABSOLUTELY GUARANTEE food safety as much as possible.

I think a lot of it comes from regulations for restaurants which are then applied to individuals as well. We have to have super-strict regulations for restaurants so that even if they bend the rules we can be reasonably certain that the general public consuming the food will still be safe. Then people take these strict regulation as hardline facts and apply them in the home as well, and Europeans see it and think, "Wow, there must be something wrong with their food if they have to do all that, American food is all tainted!"

Just thought I'd share because this seems to be such a big misunderstanding for foreigners looking in from the outside. I'm sure it doesn't help that your news outlets also tend to run with these misunderstandings and inflate them as a propaganda tool (just like ours do for European behavior, not saying it's a one-way street there).

I just don't think it makes any sort of appreciable difference on the actual timescale of typical egg consumption. From farm to table those eggs aren't going to sit around for months because if you have a multiple-month-old egg that isn't pickled or frozen or preserved in some other way it's going to taste awful anyway.

Salmonella on the outside of an egg is a greater risk for cross-contamination than salmonella on the inside of an egg. Contamination of the edible part of the egg by salmonella doesn't matter unless you're eating it raw, in which case you're taking a known risk.

I'm Australian and I just threw out my cooked breakfast and ate cereal because store brand eggs had a rotten one that wasn't so bad it stank before cooking (the carton is within its best by date)

formed grey bubbles in the yolk and when they popped it reeked, currently stinking out my bin
anyway no method of storing them is perfect, eventually a farmer is going to pull an egg from the back of the coop that had gone unnoticed for weeks and put it in with the delivery and you end up with my situation
about the only thing you can do to prevent it is make sure the chooks diet has more calcium so the egg is stronger and provides a better barrier, the store brand eggs had noticeably weaker shells

American egg washing mandates a chlorine wash for all eggs, destroying the cuticle almost universally
Australian egg washing guidelines (mostly, depending on state/territory) recommend that dirty eggs requiring more than just a warm water pressure wash be diverted to food industry shipments for immediate use instead of supermarket shipments
there is no strict requirement that any kind of chemical agent be used to wash eggs in Australia, only that the eggs be free of detritus before sale, and limitations on what chemical agents may be used if a chemical wash is elected for use during processing

chemical washes in Australia are also the reason Coles/Woolworths store brand eggs are worse than smaller independent egg producers, compliance with egg cleaning regulations at their business scale and liability is easier through the less desirable chemical wash methods

>> No.19084098

>>19084029
Australia mostly uses a chlorinated alkaline wash too, otherwise wet washing just spreads salmonella from one bad egg to the entire packing plant. See https://www.australianeggs.org.au/for-farmers/tools-and-training/salmonella-risk-assessment-toolkit/grading-washing-and-packing

Even though it's legal you have to go to a farmer's market or health food shop full of hippies to get eggs that haven't been washed.

Yeah all documentation will imply that a chemical wash should be used very heavily, but it's not a hard requirement for most producers

Generally the stuff that goes "YOU MUST DO IT THIS WAY (should you choose to)" applies to the highest throughput production scale, not to independent brands
The egg production standards in our country that regulators hold producers to range from cottage industry (must be visibly clean at point of sale or cop a fat fine at the farmers market) to independent industry (must have a clear documentation on egg production, cleaning methods and pass random site testing) to conglomerate industry (wash method recommendations are no longer optional) https://www.australianeggs.org.au/farming/egg-quality-standards

woolies and coles store brand eggs are inferior specifically because they have to chlorine wash to the most stringent guidelines, the eggshells then become more bleached and brittle and the quality drops to be identical to the american standard, at the same time they can wholesale for less because they're not diverting or removing dirty eggs unless they're egregious and taking a loss that's represented in the price of sale, eggs that should've been discarded will still ship out in a store brand carton
the funny thing is that the regulators basically guarantee that all our egg companies eventually topple when they approach the giants at the top, while at the same time guaranteeing that the industry giants can never push out the "premium" product independents

>> No.19084210
