Once a year I buy some slice it into one half to one quarter inch slices and Fry it. It tastes pretty good. A local fine dining place does a sweet breads and foie gras on toast thing that I like.

It's unironically the best single ingredient on the planet. Even if gavage was significantly more inhumane than any other farming practice it would still be worth it, but the jury's still out on that one.
