Stop raping the meat with your hands. Keep it loose, form the patty gently and grill. The grind lines should still be in the meat on the grill. If you need to toss a pad of butter on top to induce a flame to char it faster. Cook to 135f internal if you're an autist about it. That med-rare. Most people want to cook past that for safety because it's actually ground meat and not integral. It's up to you.
