Ground beef is already contaminated as the grinding process mixes the contaminated surface into the rest of the meat, which is why it typically needs to be cooked all the way through. As long as you wash your hands before handling food (like you're supposed to anyways), the ground beef is more contaminated than your hands are.

He's a line chef.
Always has been, always will be.
Someone who gets told how to do things and just replicates them well.

He's so focused on things being "top quality" because of his true position as a grunt that he could never do an actual smash burger.

His "perfect burger" was an example of this, he deconstructed it, made every component what he thought was the "best quality" and then put it all back together again, assuming that makes a good burger.
What you ended up with was a tall as fuck monstrosity where the components were fighting against each other.

Just look at that smash burger, why does it need eggs and tomatos?
It doesn't he's trying to cram in "high quality" ingredients.
Just smash a fucking burger patty down, put some cheese on it, pickles sauce and done.
You look at those ingrediants and make them work together, the pickles cut through richness, so you can have leaner meat and better cheese. The sauce should offset the dry bun, or balance if you use brioche.
He hasn't thought about any of this shit, just tried to pile what he considered high quality together aimlessly.
