How do I get my biscuits to get tall and fluffy like the canned ones? I cut in the cold butter like everyone says to but I get no spring.

Baking powder not yeast. If you mix in yeast it makes poison gas.

Use more baking powder, and fold over your dough to make layers. Try freezing the butter and then grating it into the dough, I've found it works better and gives you more time to form the biscuits before the butter melts

Are you fingering in the butter by hand to make breadcrumbs? Don't just use a food processor or spoon to mix it. You want the fat to remain as tiny lumps, not mixed smoothly
