How do I make my pumpkin soup look more orange? It always ends up an unappealing khaki color (despite being delicious.) Annato is something I saw online, but I'm afraid it would just make it yellow.

What sort of pumpkin are you using, what sort of soup is it (chunky, a bisque etc) and what are the other ingredients? If it's a bisque, onion will alway change the colour of the puree. My tomato bisque, for example, turns orange once blitzed smooth. I fix that somewhat by replacing some of the water with tomato juice. You might be able to do the same with carrot juice for a pumpkin soup, though it will sweeten the results considerably.

Don't get so hung up on making the perfect orange for Instagram, natural pumpkin has a lot of color variation. You could even add Avocado for some contrast in color, flavor, and smell. Try pic related, OP.

In my experience, those are horridly bland and have a generally more pallid colour than other varieties. Try using very ripe Spanish pumpkin. While the skin is usually a dusty shade of orange or khaki, Spanish pumpkin's flesh varies from yellow to deeply orange, almost red in colour. A redder one might help the look of your soup.

My recipe is simple: leek, butter, pumpkin, stock, rice. Boil. Blitz smooth. Sieve it to remove any bits that won't blitz. Serve with sauteed mixed mushrooms and fresh sweet parsley in it and a dish of butter with crusty bread.

Use butternut squash, you can still technically call it pumpkin soup. Also my favorite secret for pumpkin bisque is a healthy amount of Tomato Paste sautéed with the onions in butter in the beginning. The acidity does wonders to balance the sweetness, and it bumps up the savory component to make it utterly addictive. It would help your color as well. For a 6-8 cup batch use about half of a 6oz can.
The other thing is that you really should only make pumpkin soup when they're in season in late summer into autumn. Other times of year they tend to be very pale in color and bland. When you get a good October sugar pumpkin they're so deep orange they're almost red.
