Please stop pretending that the mustard market isn't past the point of diminishing returns. There is no recipe that calls for dijon where ordinary yellow doesn't do a better job.

I have had to accept this. Regular yellow mustard is simply superior to almost all of the "fancy" kinds. Maybe regular dijon is good sometimes but even then a lot of them go wrong. Whole grain, russian, chinese, all garbage. French's perfected the formula and there's no denying it.

Germans actually make the best mustard and it is the perfect middle ground between seedy, winey tryhards and industrial yellow.
I prefer them in the handy metal paint tubes, but pics related are $2 at grocery outlet.
Extra scharf/hot and düsseldorfer are the two important varieties.

That's inaccurate. While their mustard is anything but normal, they have a culture. Though not nearly as concrete as those associated with other countries, it's there. And as for taste, meh. I like several OG American foods. I don't like what they do to literally any foreign food, however, but their OG stuff (though let's face it: that pretty much always means Southern cooking) is pretty good.
