Ukrainian and Polish are very different. Ukrainian is mild in flavor and color as it's made from fresh new beets and served with vegetables. Polish is made with fermented beet concentrate giving it an intense red color and fuzzy flavor, best served spice from black pepper. Both are delicious. I'm not familiar with any other types.

I don't make it that often for the simple reason that it takes quite a long time to make. The beets have to be simmered in the pot a very long time after being peeled and chunked(2+hours), or roasted through before hand (usually 50 minutes, depending on size), or grated down to pencil size which requires either a powerful food processor or as much as 30 minutes of grating by hand, and it still needs to simmer 1 hour+ when roasted or grated thin anyway.

Even with all of that, Borscht always taste better the next day anyway. I basically only make it when the gf requests it for the 5th time in a row.

If you haven't tried yet, give picrel a try. It's a very fresh take on the borscht saga. My grandma has been making it often in summer, it is less heavy than the traditional beetroot borscht, yet still very hearthy.

Pays off to have Volhynia Czech grandma. Borscht, golubce, those pastries covered in honey which she calls "peciválky". God I miss her cooking here abroad.

I’ve only taken the time to make it as part of a special meal, big russian dinner kind of thing with lots of meat in the other dishes so adding it to the borscht seemed excessive.
