Most people don't have good enough vents to properly remove the gases. If you have a gas stove it's a good idea to get a high quality hood installed, but most people just aren't going to do that.

Not really. Granted, those hoods don’t do nothing, but they’re mainly for smoke and grease particles from your food. A true fume hood for exhaust would be much closer to the flame. Look at the gap on top of your hot water heater below it’s exhaust vent, for example. It’s about 1 inch.

Pan-frying a steak requires cast iron no matter gas or electric.
