>sautee a few sliced onions in butter on medium-high heat until golden
>drain the milk, pat the liver dry with a paper towel and cover it with flour
>remove the cooked onions from the pan, add more butter and let it foam

you're cooking it too much, liver "steaks" they should be almost raw on the inside. If don't like liver that way you can cook the hell out of it and make a sause of you prefence to add moist to if. Liver is great with buttiersweet sauces or pairings. Or you can make liver pâté, just blend your overdone liver alongside a camarelized onion, some fryed garlic, mayo, a bit of sugar, olives and a bit of cilantro, taste and adjust the flavors to your liking.

By far the most important part is to use fresh liver. I though I hated this dish until I made it myself with fresh liver.
I usually slice it maybe 2ish cm thick. Brown some onions, lower the heat and brown the liver and let it firm up a bit. Add in 2.5dl cooking cream, mushrooms and dark soy sauce. Spice to taste with white and black pepper.
Eat with rice.

If you're just plain frying it. Not too much heat and let it be a bit pink inside. Else it loses all tenderness. Simmering it in the cream takes away the dryness and is easier to not fuck up
