You should always use neutral oils like sunflower or rapeseed. At least as the base. You can add some olive oil in he end.
For acids vinegar will be more neutral while lemon juice is more bright and fresh. Don't use too much acidity though (usually 2 tablesppons per liter).If you also use mustard keep in mind those also contain vinegar most of the time.

for what purpose? to try to replace the egg? xanthum gum would not work. but any lecithin would do it. They already do that to you in hellman's mayo and such, I think they have approx 0.75 egg yolk to the gallon of mayo last I checked, and use soy lecithin instead probably due to inexpense.
I feel its worse but I'd probably fail a blind taste test. After all the egg yolk is just a source of egg lecithin and cholesterol for the purpose of mayo. 1 lb. of sunflower lecithin powder is just $7 and would make plenty of maayo. aaa chemist could make take any oil and make mayo out of extracts from human blood or brains even
