There's a whole hog roast pork place down the street from my old flat in Philadelphia called Esposito's. I went to a graduation party that served a whole pig from there and practically hundreds of of kaiser rolls for making sandwiches. Good stuff.

I think I might also have a second raw one as well. What I do know I have are several corned beef briskets, a few chickens and chicken parts (thighs, mostly), various cuts of pork, half a lamb and more venison mince than I know what to do with among blackberries from my harvest and various frozen veg.

We regularly go through stock, it gets used when making rice, meat sauce for spaghetti, adding to vegetables when baking them in the oven for some flavor, etc.

In a house of 4 we probably go through 3-4 cups a week of stock in various uses, and on a particularly heavy week I could even see us using upwards of 8 cups.

Pic related, red wine and turkey stock, cause I didn't have any beef stock on hand, and store bought beef stock is terrible quality, so homemade turkey stock worked as a great substitute, obviously lacking the beefy depth a nice veal or beef stock gives, but turkey stock still gives a nice depth of flavor and the flavor profile is a nice contrast from the red wine and the beef.

if I don't have turkey stock on hand, then I'll have chicken or vegetable stock which are also good for general all-around use as well.
