To understand why Marco has chosen to speak this way, we have to go back to 1987. In 1987, Marco and Nigel Platts-Martin opened Harveys, a restaurant in Wandsworth, London. One of Harveys most famous guests was Oliver Reed, an actor who played Proximo in the movie Gladiator. Oliver Reed was known for his drunkenness, however, as an actor he was renowned for being quiet while having a menacing presence. He explains it in this video:

I suspect that Marco has seen this video and is trying to emulate Reed. Marco admired Reed and said this of him:
"Oliver Reed was a great man who did things his own way. He used to come into Harveys, my restaurant in Wandsworth, and sit on the floor to have a drink before going to the table."
So, you can assume that Marco is trying to emulate Reed, trying to be the "quiet, dangerous" man that Reed describes.
