Every time I make coronets myself, they usually end up more along the consistency of pizza dough than anything, but the ones I see at the store look and feel way more fluffy. Am I just retarded or is there some kind of secret to making them look good like that?

Post your recipe and we can evaluate the issue. You describing yours as more of a pizza dough consistency instead of a light and fluffy consistency tells me right away your dough has too much gluten and not enough fat, but I can't know for sure until I see that recipe.

I should mention I don't use sugar, I use stevia. Maybe that's causing issues?

Never use sugar alternatives when desert recipes call for sugar. You can't count on the chemical reactions being the same.

Just get Pilsbury crescents and roll your chocolate of choice in there and toss em in the oven. Simple as. Dust some powdered sugar on top and you have one of the best and easiest desserts to make

OP here, the secret was going easy on the flour as suggested by first anon and I changed from all stevia to a 50/50 of sugar and stevia. Turned out well.
