If you have good tomatoes it's great, if you have okay tomatoes it's okay. Adding the olive oil on top is honestly unnecessary. The cheese provides fat and the tomatoes provide liquid. If you have very nice, flavorful olive oil put it on top, but if you have normal olive oil I'd leave it off.
