So many basic repetitive tasks still done by humans. I'm shocked they don't have a robot de-veiner + de-sheller -- I assumed that would have been everywhere for decades by now, since every shrimp product would use it.

A $10m R&D + buy investment on a new robot that replaces 100 jobs pays for itself in East Asia in 10 years on wages alone (and labor is more than just wages). Combine the development of multiple shrimp handling tasks for ready food production and you bring the unit costs down significantly. You'll still need staff to handle pieces rejected by the robot, but even if it cuts staff 50% it would be a crazy good investment if you plan on keeping your company for a decade. My cost estimate for a shrimp robot may be wildly optimistic, however.

As long as the meat gets to 75c it's safe. it will get to that temp with a proper kebab cooker and waiting the correct amount of time for the outside layer to come to temp.
The most dangerous things for food safety in a kebab shop are:

Seems like selling their meat in a day or two is a normal objective in a kebab store. Of course the food industry being what it is, plenty of people probably re-use. These are just guidelines I've found paraphrased on some kebab store's website.

But in my country, I've never seen a meat log that large. Typically they'll be half that size and be completely done by the time the days out. Then again we have a kebab stand every few meters next to metro stations so there's predictable demand, especially on Thursdays (student night).

Yeah I was wrong to generalize to the whole EU. At least here in France, moroccans/algerians/tunisians/gypsies tend to get judged harder. Also you'll see more black people in white-collar jobs than the other ethnicities cited, at least in my anecdotal experience. Having stand and listen to a customer for five minutes, decide his order, with other customers waiting behind him, is less efficient than customers deciding their order before waiting in line.

Except that in the case of third-generation immigrants, the fact that they are of foreign descent is irrelevant. Of course I am biased here as I had to learn the culture of the country I came to live in (binational HAPA, grew up as the only white guy in my surroundings), so I got to see how things work on both sides. When you discriminate by skin color, you're wilfully putting on blinders to anything that doesn't correspond to your preconceptions, be they negative or positive. I've seen pure white stock banker's sons have 0 idea what French culture meant because they've grown up with the expat experience and yet they're seen as more French than Mohammed from down the hall who literally works for the French state refusing passports to immigrants who don't qualify and has consumed French culture all his life. Using skin color as a predictive metric fails beyond making general statements about an abstract individual representing supposed traits.

Frankly, no one in France has 100% white descent, we've had too many waves of heavy immigration throughout the 19th and 20th century to even imagine that would be true.

I do appreciate your argument about culture, but I think not integrating has more to do with culture ghettoes and alternative banking practices in said ghettoes than anything to do exclusively with race. Of course race is a factor, but you've got a very partial view on the question if you think it explains everything and will miss out on a more complex, interesting answer.

The disdain you describe is understandable for some though. I can't imagine growing up in a monoethnic culture and suddenly having to accept foreigners, because I never had to.

NTA, but I think the point is even if the order takes longer for the customer, there is no downtime for any employees, the chef doesn't need to get distracted. Kinda like why McDonald's tend to not have a cashier take your order anymore but have a machine do it instead.

I don't get why there's a guy to take the ticket though. Couldn't the customer just pin the ticket on whatever order system the cook is looking at for directions? After all, the machine limits human error, so why the need for a last human verification?

like at Sheetz you order on a machine and that order is relayed to the cooks electronically (you get a paper receipt noting your order number but it's irrelevant in terms of the cooking process).
I suspect this relates to the Japanese aversion to laying off people so they designed the system to not make the guy at the counter's job redundant
