Nigerian recipes online often use deceptively little spices (especially in comparison to most of Africa), but the peanut+tomato sauce with fufu is pretty nifty when I've had it. I've yet to try the fish recipes from the coast but they look nice.

Thinking about it, how many cuisines are reliant on foods originating/grown in other countries?

Potatoes, tomatoes and peppers are a huge part of so many cultures despite coming from a completely different continent

The spice trade was huge, but you really don't see a lot of spices in the cultures that dominated the trade anymore, just the colonies that were captured to grow the spices

I think corn is kind of an unsung hero, past corn syrup there's corn starch which is likely more prevalent than potato

Pic related was the staple when I was in a poor part of Africa. Literally cornmeal and water paste and garden huckleberry leaves. Fortunately there was plenty of fresh fruit in the region because this shit is incredibly bland
