Precision is the glass ceiling, if you don't use recipies, write notes and measure ingredients you will never improve. You will never survive in a commercial environment, you will never achieve greatness.

it's true that metric won't solve all your problems, but that's an excuse not an argument. There's a lot of things metric won't tell you (like the strength of cumin, how spicy a chilli is, what colour a sauce is) but that's like saying a hammer won't remove a screw- it's not what metric is for.

Without metric you hit this glass ceiling and can't work out why you're not progressing. you measure cumin by taste so can't work out how much you have or need in the pantry, you judge how much chilli to use by taste and can't portion it, you gaugue the colour of sauce by eye and are forever trapped starting will less and adding more last minute.
There are two kinds of family recipes, ones in metric that record how each generation made something; and "grandma showed me" recipes that are lost or destroyed in a single generation.

Home chefs also hit the glass ceiling when cooking becomes technical, when preserving they can't work out sugar syrup by weight/volume/ratio. When pickling they can't work out PH, when making cheese and custard they can't work out the temperature drop required to set the mix.
They hit the glass ceiling, adding double the sugar which is required as a buffer, adding double the acid, freezing things "overnight" or cooking them for an unreasonable period of time. Then they hit a big red barrier "do not attempt this unless you actually understand the science involved" and they angrily poison themselves.
