Like, the egg prices are hurting me
There are only two things that ensure you can peel the egg easily
That you steam them, and you shock them in ice water immediately
When you steam an egg you might want to poke a hole in the air pocket with a safety needle or thumbtack
Rotate the needle, don't push it straight in
Everything else is luck of the draw
I've tried old eggs, dried eggs, warm eggs, cold eggs, none of those matter

One thing to make sure they come out pretty and uniform is to get grade AA
They will also center better if you cook them top end up the top end is the round end with the air pocket
They make egg steamer baskets that are useful when you need to make a ton of eggs

either you're doing it wrong or you keep buying eggs that come from the same source and this is just a byproduct of the egg's composition (genetic/diet) and processing.
from my observation, eggs that have this problem have a thick, dry membrane. possibly it's because this keeps water out during the cooking process, the white's surface will also be dry and they become stuck together. whereas you really want there to be a wet interface so that the membrane can slide off after cooking. i'm not sure, scientifically, what could actually affect that in the few minutes of boiling, but i'm sure that's the cause. the rest is decided before you cook so there's not much you can do about it. i've also found that brown eggs are more likely to have thick/tough membranes so i prefer white for boiling. (egg color is genetic also)
