You can eat em green, they're pretty good like that honestly. Adds a bit of sourness and gives them a bit of a crunch. Eating ripe and unripe mangoes together is a nice treat.

They really fuck up the hands of the people who pick them after a few years though. The sap that comes out of the vine it's dangling from causes skin problems.
