Yucatecan is my favorite Mexican regional cuisine. It's alot of citrus, habanero, interesting colors, balancing between bright citrus and spicy with earthy annatto and deep black charred produce, seafood, and the infamous cocinita pibil. Some yucatecan deep cuts are sikil pak (it's like a roasted habanero pumpkin seed salsa with the consistency of hummus), xni pec (pink fruity habanero salsa), Recado negro (black habanero salsa made out of burned chiles and tortillas), panuchos/salbutes (puffy tostada/tacos stuffed with beans), and huaraches (Mexican flat breads)

Oaxaca
It has lots of adobos / moles / pipianes. Also tamales. They are so fucking difficult to make since it takes lots of time the prep work. Plus they are home of the mezcal, which Spaniards copied and called it tequila.

None of that is what is said in your source link. Here is the exact paragraph quote:
