Depends on the bread, anon.
If it's a loaf that comes with a twisty tie, you're better off just twisting and tucking after you're down to about 2/3 of a loaf because there's enough empty bag to use to keep the bread fresh. Before then, just reuse the tie.

Carve off the extra portion, put in bag, put bag in freezer immediately, way before you even begin to do anything with the portion you do want to eat. It takes couple hours to defrost so you won't be willing to come back for it.
