we grind up prosciutto ends and leftover pancetta at work as part of the base we use for meatballs, adds a ton of flavour and keeps them super moist
i dont know if i would use spam but it should work in theory

Yeah you had to act years ago. I buy eggs from a farm and now they have a waitlist. They prioritize long-term customers. Other farms I go to say they are sold out. You'll likely have to buy a big order once to get your foot in the door, like a side of beef at a time.

I usually just make it with straight beef but I actually ommit the flavor blast of ketchup in the mix and use BBQ for the glaze. It's not crazy but it makes a damn fine meatloaf sandwich for the next few days.
