Just have micronutrient supplements then.
vitamins, zink, selenium, magnesium, potassium, iron, chrome, copper, etc can all be had through supplements (pills, capsules, powders, drinks).
As long as you get all your macros from mac n cheese you can just supplement all the micros.

Cheese has most of the vital nutrients you need. It’s extremely unhealthy but not THAT much worse than the standard American diet. It will decrease your life expectancy significantly, but you can probably survive off of Mac & Cheese for 1-3 decades. Perhaps even more if you’re not obese and somewhat physically active.
