Tony fucked up his life by burning down the OG Vesuvio, and he never recovered from it. He was more focused on being popular than running a good business. He wanted to be connected, he wanted to have respect, and instead of getting it in a way that fit his actual skill, ie by being a great chef and running a successful restaurant, he tried to compete with the mobsters in a game he knew nothing about and had zero chance of surviving. He was lucky he made it to the end of the series with only a bruised ego and a burned hand.
