It's not, it goes great with liver. Maybe you forgot to add a stock pot.

You get it fresh, from young animals and bake it rosé. That's it really. Aged vinegar does help (cider, proper balsamic, malt,...) because liver is quite greasy in nature. Citrus is too aggressive, it only works with old animals' livers.
