Mint is the best herb. No other herb can boast such wide applications, sweet and savoury. It could be ice cream, it could be salsa verde for lamb chops. It can garnish a bowl of Pho or a Chocolate Moelleux. It's all delcious.

I haven't had these in a metric yonk but my mother sent some for Christmas and my god they're better than I ever remembered. Cool, crisp, perfect balance of cocoa and that intense slab of mint.

It's wild some of the things mint pairs with despite all logic.

This is the best cocktail I've ever had. It's mint, pineapple, and peach. Did you know mint works well with pineapple and peach? I didn't.

Fuck that. It's one of my favorite cocktails too, so do it this way!

Muddle 5 (1 inch) chunks of fresh pineapple in a drink tin. Add 8 mint leaves, 1 oz fresh lime, 1/2 oz rich syrup (ideally Demerara syrup), 1/2 oz peach liqueur, and 1 1/2 oz lightly aged rum, I like Havana Club here. Add a good scoop ~12 oz crushed ice, and either shake hard, or blend on a stand mixer for 10 seconds. Double strain into a chilled coupe.

yeah I picked a bad pic and didn't realize until too late. The blended version is shit and too bitter. The ideal is the smuggler's cove version imo.

Blending gets all the bitterness from the mint leaves. muddling with the pineapple then shaking and double straining keeps a lot of that out. Much more pure.

1. The Uzaki reaction isn't about medicine. Uzaki gets pissed off specifically about people who say mint tastes like toothpaste, because toothpaste tastes like mint. It's mint flavored.
2. I understood Rootbeer wasn't common in Japan, so I brought Rootbeer barrels as omiyage when I arrived. It was only then I learned that most Japanese hate the taste and think it's like bad medicine.
