I actually find its taste a bit overpowering in a lot of dishes. When I cook anything like a soup or stew I usually use a little big less celery compared to onion/carrot. The exception to that is Pea & Ham soup because you need a strong celery taste for that to be right. I remember when Massel veggie stock powder changed their recipe I had to stop using it because all you could fucking taste in it was celery powder

I used to think this. Then I learned about mirepoix (and actually made it instead of just seeing it in recipes I never actually followed). Now I always get a bunch whenever it's on sale -- it has quite good durability in the fridge.
