shepards pie supposedly originated in ireland although theres a lot of debate (obviously) as to whether this is true or not.

the chef john way is okish for a basic start. the way i do it is:
>brown lamb mince
>add finely chopped onions and carrot with some beef dripping (usually lamb mince is quite lean, but if yours gives off a lot of fat, skip this) and cook until slightly softened
>add garlic
>add red wine + worcestershire (something suited to lamb, usually i like wines with plum notes for this)
>once wine has cooked off the alchohol a bit, add some gravy
>lamb back in
>add bouquet garni of your choice as wine reduces a little
you can thicken with a roux or flour if you like but usually i find as long as you don't absolutely drown the lamb it comes to a nice consistency after baking. at work we have a constantly rolling supply of gravy, but guessing you don't have that in your kitchen so you can probably skip that or make an impromptu one with any leftover meat juices and bits from other dishes. i wont detail how to make mash cause i assume you know, but make sure its well seasoned, and if you want to add cheese to it use a cheddar that is aged but not overwhelmingly mature. i like a young(ish) welsh slate aged since they have excellent flavour but are gentle enough in their flavour to not totally fuck your dish. personally i dont tend to add cheese to the mash because it doesn't work as well as it does in a cottage pie. you can also brush the top if it with egg to ensure a properly crispy top, ideally you want to pipe the mash on but its not a big deal if you dont.

Britain had involvement and control over Ireland starting in the 1100's, up until the Anglo-Irish war in the 1920s. Shepards Pie is said to have come about in the 1600's and 1700's.
