How much worse nutritionally is frying broccoli in a pan compared to steaming it? Steamed vegetables are just such a chore.

not terrible but oil is bad for you. I use a non stick pan and that oil spray stuff which helps me use as little as possible.

I've heard steamed is better for the nutrients, NOT boiling but steaming. I feel like steaming is easier too you just set it and let the timer go off then pluck them out, throw them in a bowl toss with salt and pepper and butter if you're obese then you're done. If you saute broccoli on the stove you have to actually stand there and cook it so it doesn't burn and rotate it. Steaming you just set a timer it's like making boiled eggs. Why do you hate steaming

Broccoli is frustrating. Tenderstem is nice but boring, even steamed the construction of the typical floret means the buds will be mush and the stems hard, even when steamed, and even when steam dried. The only work around I've found is to either cut to the bone and separately cook the stem, or tenderstem boil upright to soften the stem and finish off in the pan.

Recently I've been experimenting with broccoli purees. It's a very easy out and with enough butter it comes out well. You can plate this well with other green veg on top of the puree, or even beneath a protein.

Never figured out how to make broccoli work without hiding it in something else. Any tips would be welcomed.

if you're eating a reasonably balanced diet i wouldn't be concerned about the nutritional differences in the cooking methods. besides, if you can't be bothered with steaming then at least stir frying will get you to actually eat it. slightly less nutritious broccoli is better than no broccoli.

What makes something healthy is that it has lots of fiber, protein packed into a carb such as lentils or beans. Broccoli is fibrous and nutritious, but doesn't contain much energy. No coating goyoil on your veggies won't kill you but it will have an effect in the long run

not op but I think it's easier to get flavor into the broccoli when you saute or braise it versus steaming it and seasoning it when it's done. it's like making japanese curry from scratch and cooking everything in the sauce from the start, as opposed to just adding those shitty cubes at the end.

Just throw frozen broccoli into an Instant Pot and set it to manual low pressure for zero (0) minutes.
It'll be steamed while the Instant Pot is heating up and getting up to pressure but still crisp enough

What? It takes almost no effort.

For hardy vegetables like broccoli, green beans, carrots, etc, I like to blanche them, and then saute. If you just straight saute broccoli its not going to have a nice texture.

Different vegetables require different amounts of cooking; if you want your veggies to taste the best you need to learn this stuff. For broccoli I would blanche in boiling water for 90 seconds, strain, use the same pan with some fat (butter or coconut oil) and saute on high heat. It's hard to say when it's done; you don't necessarily want browning. You want it to get as hot as possible without browning or burning. That blast of high heat will give so much good flavor.

If you ask me, cooking vegetables well is one of the most difficult things to do and describe. Luckily veggies are cheap. Try some stuff out!

I haven't raw fried for years after discovering this.

Just made butter chicken for the first time. It’s not restaurant quality but it’s close. Very good. The naan came out perfect. Any tips to push this over the edge? It almost tastes like it’s somehow missing butter but there’s an entire stick in the sauce.
